In the past 6yrs we purchased a flat, found employment, lived below our means, built an emergency fund, purchased a reliable car and saw the financial benefits of our frugal lifestyle. Our only debt is our mortgage. Our aim is to manage our cash flow wisely, pay off our home quickly and eventually work for pleasure, not necessity. Junk Food Dinner & Great Homemade Lunch

Hello everyone. Thanks for popping in and reading about my highs and lows in my frugal eco quest. I love comments and questions so feel free to click on the comment link. I enjoy Blogging, its a fun creative outlet and as for reading blogs - It's bordering on an addiction!!! But I learn so much from everyone and take on some peoples tips into my own life. So thanks for being readers and thanks also to those who have blogs, this is a very cool community to be part of.

Tonight we ate rubbish. We had McDonald's. We wasted our money and health. But we don't do this weekly as we used to. It's roughly a once a month affair now. I should put it on the calendar to keep real tabs on it and make sure I'm not tricking myself. Since we started the 40 minute clean up every night, better calendars and organisation are becoming possible and achievable.

Even though our dinner was rubbish we did have nice lunches to take to work and school. I make quick easy simple sushi in just a few minutes. I simplified the recipe and made it super basic. I just filled the Nori Rolls with rice (sprinkle of vinegar), tinned tuna and mayonnaise (with a dash of chilli for the adults). Dolly was so thrilled she said "No ones ever taken sushi to school in their lunch box! I'm going to be the first one ever!!!" I also added a snake bean and some berries from the Botanical Gardens for vitamin and colour in her sweet 2 tiered lunch box from Grandma.

Pleasing my family makes me happy. And pleasing myself with some inexpensive sushi for lunch is an extra bonus.

Any quick simplified exotic delights in your lunch boxes or dinner table?

  1. Nothing exotic here! But, I am not packing a lunch these days. People did seem to think my daily bowl of soup for three months was a bit over the top since they all craved going out for something different each day. By eating at work in the breakroom and eating basically the identical lunch each day, I lost 32 lbs. I packed breakfast, lunch, and three snacks each day, at breakfast (turkey sandwich) in the car on my 1+ hr drive, and ate snacks when I could escape students for a bit.

    The thing I packed my children for lunch that impressed them and other students was hamburgers from the grill. I made them up immediately on a bun with condiments my children each wanted and quidkly refrigerated them. These were not leftovers but planned as I fixed our dinner on the grill. My children loved these for school lunch and said their friends all wished their mother would fix them grilled burgers for their school lunch.

    You can imagine how tasty these were compared to a school lunch.

  5. I think take-out once a month is a good compromise - not too unhealthy or expensive and you don't have to feel like you are "missing out."

    I love seeing the photos of Dolly's lunch box. Thanks for sharing and thanks for reminding me about homemade sushi. I think it must be over a year since I made it, now I am getting all excited about what I might put in it.

    I keep forgetting about all the simple yummy things too make too. Maybe if I kept a little note book of recipes that work well for us, I may stop forgetting about them. But then that's just another thing on the TO DO LIST which is already super long.

  8. I don't have anything near as exciting as you! For example to nights dinner is pie and vegies, yummy though.

  9. I couod eat sushi everyday for the rest of my life and not get bored I love it, but only make it home since i seen on some show the contamination levels.. love that molly is a little trend setter
